This was on my insta-story (@how_to_eat_RD) a few months back and I never put it up here, but it’s a great option for when you’re not feeling breakfast when you first wake up or for lunch when your options in the fridge are pretty sad. Check it out!
At-the-Office Microwave Egg Scramble
In a hard, microwave-safe container:
In a ziploc bag:
Leftover vegetables, raw greens, or frozen veggies (~1 cup)
1 slice cheese of choice (optional, kind of)
Seasonings of choice
- Crack two eggs into the container you’ve carried them in. Add a little water and whatever your seasonings are, and scramble.
- Mix in your veggies and cheese if desired. If you’ve chosen frozen vegetables and they haven’t thawed, you will have to microwave these separately.
- Microwave for 2 minutes. Stir.
- Put back in microwave for 1:30, or until done.
