Make a healthy breakfast at work in 5 minutes or less

This was on my insta-story (@how_to_eat_RD) a few months back and I never put it up here, but it’s a great option for when you’re not feeling breakfast when you first wake up or for lunch when your options in the fridge are pretty sad. Check it out!














At-the-Office Microwave Egg Scramble

In a hard, microwave-safe container:

2 Eggs


In a ziploc bag:

Leftover vegetables, raw greens, or frozen veggies (~1 cup)

1 slice cheese of choice (optional, kind of)

Seasonings of choice


  1. Crack two eggs into the container you’ve carried them in. Add a little water and whatever your seasonings are, and scramble.
  2. Mix in your veggies and cheese if desired. If you’ve chosen frozen vegetables and they haven’t thawed, you will have to microwave these separately.
  3. Microwave for 2 minutes. Stir.
  4. Put back in microwave for 1:30, or until done.
